Made some Caramel Apple Pecan Cinnamon Rolls today!
These guys are HUGE!!! Bigger than my hand.
Super fun to make (and eat). I’ll edit this post with the recipe once I’m at my computer~

First SOLO cake for an ACTUAL client!
My clients were a lovely Brazilian and Portuguese couple who were celebrating their niece’s birthday… on Thanksgiving. Haha Killing 2 birds with one party.
Anyway, this cake was a blast to make!
It’s a french vanilla sponge cake with natural, fresh strawberries and strawberry jam filling covered in whipped cream icing~
It’s very moist and I decided not to drain the natural strawberries too much because I wanted that syrup to really sink in. 
Welp, I have a long break so I think I’ll make a few more cakes/treats in the next few days. 
I have a chocolate stout cake I’ve been wanting to make along with a coconut cake.

First SOLO cake for an ACTUAL client!

Anyway, this cake was a blast to make!

It’s a french vanilla sponge cake with natural, fresh strawberries and strawberry jam filling covered in whipped cream icing~

It’s very moist and I decided not to drain the natural strawberries too much because I wanted that syrup to really sink in. 

Welp, I have a long break so I think I’ll make a few more cakes/treats in the next few days. 

I have a chocolate stout cake I’ve been wanting to make along with a coconut cake.

This is a three layer vanilla cake with a chocolate fudge ganache filling and strawberry whipped cream frosting. 
The cake is supah dense. It’s crazy.
To make the ganache I used semi-sweet AND bitter sweet chocolate.
It’s a nice contrast to the sweet, light strawberry whipped cream.

Here are two of the bottom cakes for the wedding I did this weekend.
It was for a very good friend that I’ve known for over 10 years. :)
These two are chocolate and vanilla with a strawberry jam filling and whipped cream frosting.
Also added some little edible stars and pearls over the rosettes because they were hella cute. 
She ended up absolutely loving her cake! 
Which is freaking awesome. 
Probably would’ve punched her in the throat if she didn’t like it.
Joking.
But really.
Didn’t get to take a good picture of the wedding cake assembled because the venue was freakishly dark and my flash was being impossible, but I’ll post all of the cakes soon.
Also, if you think you’ve seen these photos before, it’s because you probably have. They are on my instagram, but I figured it was better to add a watermark and post them here.

It’s a classic white wedding cake.
Here’s what ticked me off.
The flavor was FREAKING AWESOME.
BUT.
It was sort of dry and not as dense as I thought it’d be.
Which, you know, is fixable. 
BUT MY EXPECTATIONS WERE SO HIGH. 
And… the worst part is… that I think it’s my fault because I baked it for too long.
*sigh*
I admit it. 
But it wasn’t a complete waste.
The cake was still good and gone in less than a day.
And I also got to practice some rosette piping for the wedding cake I was making the next day.
Needless to say, I will continue to work on that recipe. ;n;

I am an amateur. Never have I ever taken a baking class.

I don’t work at a bakery.

My mother was a baker… and that’s that.

Mostly, I bake because I like to eat cake.
